Using both traditional techniques and the latest culinary methods, we transform seasonal ingredients into modern Shojin (Buddhist temple) cuisine. Shojin cuisine is rooted in the philosophy of minimizing waste, emphasizing the importance of using every part of the ingredient.
Our owner-chef, Daisuke Nomura, is a recognized vegetable cuisine expert and was selected as one of the Plant Forward Global 50 chefs, who lead the world in plant-based cooking.
In recent years, he has participated in numerous events both in Japan and abroad, sharing the wonders of Japanese Shojin cuisine with the world. Sougo is visited by health-conscious and environmentally aware guests from all over the globe.
